Measure what matters

Five consecutive years of operating data from a working Detroit restaurant, a second site in its opening year, and a published methodology that separates what is confirmed from what is modeled.

Five years inside one kitchen

IVY Kitchen + Cocktails, 2021–2025

IVY has published a waste reduction impact report every year since 2021. The prevention and diversion rate has climbed every year without exception — from 30.0% to 35.5% — while guest volume grew 18%. That is the operating record the platform is being designed from.

Host-site baselines

Antidóte Detroit opened in 2025 and published an opening-year baseline alongside IVY’s fifth report. Two very different operations — a seven-day full-service restaurant and an 83-seat dinner house nine months old — give the pilot two distinct environments to design against.

Method in brief

  • Food material modeled at 0.50 lb per guest cover — a planning factor applied consistently across all years and both sites
  • IVY 2025 disposition: 9.45% source prevention, 2.36% internal reuse, 23.64% organics diversion, 64.55% landfill residual
  • 2021–2024 covers calibrated backward from the 2025 pattern at the stated year-over-year growth rates
  • Greenhouse gas estimated with the EPA Waste Reduction Model, a high-level comparative tool
  • Financial values are planning scenarios, not verified accounting savings

What replaces the assumptions

  • POS exports confirming actual covers by day and month
  • Scale records and pickup tickets replacing the 0.50 lb factor with measured weights
  • Purchasing and waste-hauler documentation
  • Destination confirmations from composting and redistribution partners
